As it is officially summer in Ireland I have decided to do a series of post on summer foods. I love bar-be-cue season, there is something nice about being outside and having great food to go with it and while burgers and sausages are fun, I like to change thing up and my favorite thing to make which gets veg into people are skewers. The great thing about Bar-be-cue Skewer recipes is you can have lots of different varieties and even do a vegetarian version for those people that usually get left out at bar-be-cue time.
Pork Apple Bar-be-cue Skewer –
Chopped Pork Pieces – I used 4 pork chops because that is what we had
Green and Red Peppers chopped into chunks
Cherry tomatoes in halves
Red Onion cut into chunks
1/2 cup of Apple Juice or Apple Cider
2 tbsp of Bar-be-cue Sauce
1 tbsp of balsamic vinegar
2tbsp of Olive oil
Salt and Pepper to taste
The How to Bit
Mix the Oil, Apple juice, Balsamic vinegar and bar-be-cue sauce in a large bowl and add the Pork and mushrooms and cover thoroughly – place in the fridge for an hour or more if possible.
Before cooking if using Bamboo Skewers soak the skewers in water and then place the vegetables and pork onto the skewers and cook on a hot bar-be-cue.
Pour the marinade over the ready skewers to coat one last time and turn regularly to cook evenly.
Serve with Salad and Vegetable Cous Cous
Chinese Chicken Bar-be-cue Skewer
4 chopped Chicken Breasts
Chopped Vegetables of your Choice – we used cherry Tomatoes, peppers, and shitake mushrooms
Chinese Style marinade
1/3 of a cup of Honey
1/3 of a Cup light Soya Sauce
2 tbsp Sesame Oil
1 Garlic clove minced
1 tsp Five Spice
The How to
As Above – mix the marinade add the chicken and marinade for at least an hour.
Serve with Stir fry Veg or Flavoured Rice
Beef and Guinness Bar-be-cue Skewer
1lb of Steak pieces
Courgette pieces, cherry tomatoes, peppers, onion and button mushrooms
1/2 Can of Guinness
1 clove Minced Garlic
2tbsp Olive Oil
2 tbsp Balsamic Vinegar
1 tsp brown Sugar
1tsp cajun spice
Pepper and Salt to season
The How to
As Above – marinade the meat and mushrooms and courgette in the marinade mix and cook on the bar-be-cue.
Serve with home-made potato salad and Caesar Salad.
This was my husband’s recipe and was incredibly tasty so all credit goes to him – I think he liked the idea of having 1/2 a can of Guinness to drink after it.
You can also have Prawn skewers, Vegetable and Tofu, Salmon and Fruit, in fact, anything that you can impale is fair game on the bar-be-cue.
