Meal planning is fantastic for Families on a budget. You only buy what you need, you can shop the “Specials” in the supermarket and you use what is in your pantry. Sometimes we all need to tighten our belts whether it is to save for something special or because needs must.Budget Meal Planning on a budget doesn’t mean you have to survive on beans. I have done just that this week been careful to keep to a budget. When things are a bit tight it is time to go back to healthy budget-friendly food that won’t break the bank or the waistline!

How to Keep on Budget with your Menu
- This menu was based on shopping the Specials in each of my local Supermarkets.
- Knowing which Supermarket is the cheapest for each product
- Never Shopping when Hungry – this one is Vital !!
- Don’t buy more than you need.
- “Shop” from your own freezer, fridge, and cupboard first

This One pan Chicken and Asparagus Potato Roast looks expensive and it would be if I didn’t know where the cheapest option for Chicken Breast was. This is where a “price book” comes in handy. What is a “price book”?
A Price Book is a list of the products you purchase and the cheapest price you can normally get them at – that way if there is a sale at a lower price on you can stock up
When you know your target prices, you know when the price is a good deal and that you might want to go ahead and stock up. For example, if you know you can usually get your chicken usually at 3.00 for 2 you can watch for the sales cycles which allows you to stock up at the absolute lowest price!
I picked this Chicken breast up at a wholesalers 10 for 9.99 which is the cheapest option and Asparagus is 49c this week instead of €1.39. This dinner in total is €1.37 per portion. I will share this recipe with you on Friday.
TIP – To make the chicken go further split it into portions right for your family and freeze.
Sometimes especially if your freezer is full shopping from your Freezer is the cheapest option and I have a bag of these Pork Perogi which are a Polish Dumpling served with sour cream usually. My family really enjoyed them so I went back when the shop had reduced them to clear the freezer for new food. This is a great way of saving money.
TIP: Don’t be afraid to try something new from the special offers- if your family don’t like it at least you know
I have finally cracked the recipe for Gluten Free Pizza If you want stuffed crust Pizza you can find that recipe generic flomax here. I have included gluten free flour on my list but if you are lucky enough not to eat it you can remove it. The Recipe for low-fat wedges is here.
TIP Making your own pizza is cheaper than buying take out and you can adjust it to your families tastes so if you need gluten free or wholemeal or vegan cheese you can do that.
This Glazed Pork chops are on Special this week is great as a midweek dinner and they are great in summer with new potatoes and salad from the garden
TIP: Don’t feel guilty taking shortcuts like buying prepared meat if it is on special offer
Last week I shared with you 14 Awesome Summer Slow cooker recipes and one that caught my eye was BBQ chicken wings in the slow cooker by Hungry Hobby. Chicken Wings are on Special this week for €2.00 in Lidl and I plan on cooking them in my slow cooker and serving the with some home-made wedges
TIP: Using your slow-cooker saves money on your electricity bill
I plan on using Burgers I have in the freezer. I brought them when they were on Special 4 for €1 and I got 4 packets for the freezer. They are on special offer in Lidl this week 2 for €2.00 ( so as you can see my bargain was even better).
TIP: Only pick up specials of Meat and Vegetables you know you are going to use no point picking up tripe if no one will touch it!
Chicken is the cheapest Roast I will be making that for Sunday dinner. And I this tasty Mango Ice-cream has two ingredient and it Vegan friendly. It is made by freezing chopped old banana’s I always do this if they are going brown. You peel and chop your mango. Add the mango to a blender with you frozen banana pieces and blitz until smooth. Place in a freezer container to store or eat immediately (which is what happens here). Mango’s are on Special offer in Lidl this week.
Tip- You local greengrocer might sell off older banana’s cheaply. I know our’s does and you can chop and freezer them for smoothies , ice-cream and baking.
