This week is all about Coeliac Awareness week Meal Planning. The annual Coeliac Awareness Week, organized by the Coeliac Society of Ireland in partnership with SuperValu – is taking place this year from 8th to 15th May. The theme of this year’s Week is ‘Faces of Coeliac Disease’. and one of those faces is my Eldest Daughter Rebecca.
Why Coeliac Awareness week is important to me
I actually have lots of Family members who suffer from Coeliac disease. It is not just some dietary fad to them it is a serious condition.
Rebecca has always suffered with her stomach and with allergies. She had been originally diagnosed with IBS a few years ago. But the medication wasn’t working, which is when they tested her for gluten intolerance. Guess what she is definitely allergic to gluten so that meant I had to start looking at all our family meals differently.
What is Coeliac Disease?
Coeliac disease (pronounced see-lee-yak) is an auto-immune disease causing some adults and children to react to the gluten. Gluten is a protein found in wheat, barley, and rye. Gluten is found in bread, biscuits, cakes, pasta, beer, pizza. It is also in many manufactured foods where gluten is contained in the ingredients such as soups, sauces, gravy, salad dressings, crisps, chocolate, sweets, and ready-meals. Coeliac disease is hereditary, however, both genetic and environmental factors play important roles in coeliac disease.
How to Meal Plan when you have a Coeliac
I was incredibly lucky to be able to attend a meeting in December where the chef Geaoroid Lynch was speaking about his diagnosis as a coeliac. I picked up a copy of his book “My Gluten Free Kitchen” and it has been a godsend to help us quickly adjust to help Rebecca’s dietary needs. The tips in his book are fantastic like
- Have a separate compartment in the fridge and freezer for gluten free food
- Label frozen food carefully
- Wash everything well to avoid cross contamination
- Have a “gluten free” Pastry brush, rolling pin and sieve.

So what does a Coeliac Meal Plan look like?
Worried that things will have to change your menu dramatically, not really. My daughter’s love pasta and luckily Gluten -free pasta is not only widely available but is in budget supermarkets too. So you won’t blow the budget by changing over to gluten free. And this Chorizo and Garden Vegetable Pasta is quick and easy.
Remember lots of fresh ingredients contain no gluten and this One Pan Lemon Chicken, Asparagus and Potato roast is perfect. Also Chicken and Asparagus are both on Special offer this week in Lidl.
There is a fantastic recipe for Gluten Free Burger Buns in “My Gluten Free Kitchen” and with Burgers on Special in Aldi this is a great mid week meal.
This tasty Garlic stir-fry turkey and broccoli contains cornflour which is gluten free but always check the box as cross-contamination in the factory can happen.
Rice is great for Coeliacs and this tasty recipe takes less than ten minutes to make if you have a microwave steamer. You can find the recipe for Steamed Prawn and Spinach with raspberry Vinegar here
Gluten free pizza is widely available and this week there are many gluten free offers in Supervalu. But if you would like to make your own I will be sharing our recipe on Friday.
Sunday I will be roasting the chicken in the slow cooker as I didn’t get to last week. I was overruled and we had Salmon on the BBQ. It was gorgeous I might add. And Homemade Strawberry Ice-cream is definitely Gluten free.
