It is Easter holidays here in Ireland and I am trying to organize my Easter Holiday Meal Planning so I can get out with the family. It takes a little effort but once it is done you will know dinner is taken care of for the week and you know you will have saved money.

We were meant to have Cottage Pie with Sweet Potato Crust last week but there was a change of plans. So I am making today mince is cheap and cheerful
Tip = save money by using cheap meat or no meat at all. Try a veggie version of your favourite dishes.
I love my slow-cooker it is perfect for when I am at work or out for the day. And this Low-fat Beef Stroganoff is a family Favourite.
Tip- The slow-cooker is perfect for tougher cuts of meat as it softens them up
It is Pizza Night and this tasty Easy Homemade Gluten-free Pizza recipe is perfect for my daughter’s
Tip – If you have someone with a special diet check Aldi and Lidl for cheap Gluten-free and Dairy Free options
If I am working sometimes I use my slow-cooker, other times I make a quick and easy meal. This Chorizo and Garden Veg Pasta is quick and tasty and you don’t need your own garden veg to make it.
Tip – Pasta dishes are quick and easy and you can easily get wholemeal and gluten-free pasta now to make it healthier.
This tasty Haddock and Leek Gratin is a great fish dish for Good Friday and will be in my Snapshot and Snippets Newsletter this week.

We are going to be busy on Easter weekend and Baked Potatoes are a quick and easy dinner. I love it with Bacon bits and cream cheese and my youngest loves Tuna filling.
Tips: Simple meals are great is everyone is on the go – ( Pre-bake potatoes in the oven and heat them up when needed)
If you are not full of chocolate egg. Try this Almond Strawberry Rhubarb pie recipe. It is so good and Rhubarb is in season and on special.
