In the summer it is so easy to forget meal planning as school is out and timetables are out the window. But slowly you realize that take out and quick meals are ruining your budget and your waist line. So I have come up with a Healthy Summer Time meal Plan to be easy on your waist and your purse.
Supermarket Specials are not just meat you can get lots of fruits and vegetables and still save money. Go through the special Leaflets or the online information of your local supermarkets. I planned my menu from Lidl’s Newsletter as that is my local Supermarket. From the specials write a list of meals your family will eat and add them to your Printable Meal Plan, below, to cover the days you are home cooking.

How to Keep Healthy with your Menu
- Never Shopping when Hungry – this one Vital
- Write a List and Stick to it.
- Avoid Packaged meals even if they are cheaper
- Eat plenty of fresh vegetables and fruit
- Try to add a Meat free meal to you diet

This week you can pick up Asparagus in Supervalu on special this is because it is in Season and this tasty Easy Lemon Chicken with Asparagus and Potatoes is an easy healthy dish and so tasty. you could also you Turkey Breasy which is on Special this week for €3.00 in Lidl.
TIP: Buy chicken breast is bulk to save money and freezer – I get mine 10 for 9.99 this is the cheapest I can get chicken
This Tasty but Low-Calorie Slow-cooker Beef Stroganoff is great in summer as you cook it in the Slowcooker while you are out in the Sunshine and come into a cool kitchen. No slaving over a hot stove. Serve it with brown rice.
Tip: To make dishes healthier try lower fat version to cut down on your fat intake
Wednesday is always Pizza night. We make ours Gluten Free as my daughter is gluten intolerant. I know this isn’t “healthy” but serve it with a Large salad and top with tasty vegetables.
Tip – One Cheat meal is okay during the week and you can always make it healthier
A good Salad during the summer is great and with chicken breast and bacon, Caeser Salad is a tasty dinner in itself – add lots of Salad vegetables like cherry tomatoes, cucumber, and spinach.
Here is my Home-made Caesar Salad Dressing
- 2 small garlic cloves, minced
- 1 teaspoon anchovy paste (found near the canned tuna in the supermarket)
- 2 tablespoons freshly squeezed lemon juice, from one lemon
- Dijon mustard -1 tsp
- 1 tsp Worcestershire sauce
- 1 cup low-fat mayonnaise
- 1/2 cup freshly grated Parmigiano-Reggiano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
The How to Bit
- In a medium bowl, whisk together the garlic, anchovy paste, lemon juice, Dijon mustard and Worcestershire sauce.
- Add the mayonnaise, Parmigiano-Reggiano, salt, and pepper and whisk until well combined.
- Taste and adjust to your liking. The dressing will keep well in the fridge for about a week.
To make your Caesar Salad. Add salad leaves, bacon pieces, a slice cooked chicken breast and croutons to a bowl. Drizzle with Dressing and scatter parmesan flakes over it.
TIP: Making your own dressing means you know what is going into them and what fat they contain. You can always swap Creamy dressing for a Vinegar dressing.
Salmon is divine and usually, a fish kids will try and enjoy as it has a not too “fishy” taste it is also on Special this week. Did you know you can cook it in the slow-cooker too – Place it in the slow cooker on top of your chopped leak and spinach with a squeeze of lemon juice and cook on high for 1 hour for perfect salmon. We serve this with Tasty Sweet Potatoes.
TIP: Try and get fish into your family diets once in a while it is so good for growing bodies.
This tasty Quick Vegetarian Rogan Josh is perfect for when you want that takeaway curry taste but want to save money.

For Sunday Dinner I am going to make Roast Chicken as I got some on special a couple of weeks ago and it is in my freezer. And for dessert, I am making this as Mangos are on special.
And I this tasty Mango Ice-cream has two ingredients and it Vegan-friendly. It is made by freezing chopped old banana’s I always do this if they are going brown. You peel and chop your mango. Add the mango to a blender with you frozen banana pieces and blitz until smooth. Place in a freezer container to store or eat immediately (which is what happens here). Mango’s are on Special offer in Supervalu this week.
Tip- You local greengrocer might sell off older bananas cheaply. I know our’s does and you can chop and freeze them for smoothies, ice-cream, and baking.
Specials are not just meat there are usually fruit and vegetables too
