Hello May. can you believe that May starts tomorrow? Here in Ireland, the sun is shining and May Meal Planning is underway. The shops are full of summer food to tempt us and Spring veggies are springing up in the garden.
This week’s Special in Ireland

MEATS – €3.00 – Whole Chicken, Breaded chicken mini fillets, Small Ham Fillet, Turkey Burgers, Organic Burgers
€4.00 – Lamb Steaks, Salmon Darns
VEGETABLES 49c – Limes, Tomatoes,Beetroot, Cabbage 79c – Pears, Red Apples, Easy Peelers
VEGETABLES 49c – Celery, Red Onions, Chillies and Tomatoes – 79c Red grapes and Mix green veg.
MEATS – €3.00 Fresh Salmon Fillets, 28 Day Matured Irish Round Steak, Irish Turkey Breast Steaks/Stir Fry,Small Irish Ham Fillet
I am going to include what is in season from the garden or the hedgerow from now on as I grow my own vegetables to save money.

This Monday I am making Cottage Pie with Sweet Potato Crust – Actually, as I have Lamb mince this will be Shepard’s pie!
Tip = Pick recipes you know your family love this recipe never fails in our house
I am working on Tuesday so I am relying on my trusty Slow cooker for this Slow Cooker Beef Goulash which is so good with crusty Loaf.
Tip – Slow-cooking is so handy it frees up your time and saves money
Wednesday I run all my errands and I want something quick and cheap like these tasty turkey burgers from Lidl – done with Spicy wedges they are a perfect quick meal.
Tip – When you are busy instead of reaching for a ready meal or takeaway menu cook something quick and easy.
I am so happy the Spring Cabbages are now ready to havest and this simple but wholesome Fried Cabbage with Bacon is a great way to eat it – the recipe will be in the newsletter this week.
Tip- Use in Season Vegetables in your cooking
Nothing nicer than a takeaway but what if you can’t afford one – make your own Tasty Stuff Crust Pizza.
Tip – Make your own take- away food you will save lots
One pan meals make life so much easier if you busy over the weekend and this delicious Easy Skillet Garlic Chicken and Potatoes are so easy to throw together
Tips: Simple meals are great is everyone is on the go
We will be having a Roast chicken and vegetables on Sunday and I usually provide dessert. We have a lot of leftover Bananas so I am whipping together this Light and Tasty Gluten-Free Banana Bread
