This Catalan Beef Casserole recipe was adapted from a Lidl recipe I found on their site, it looked amazing. So I wanted to make it in my slow-cooker though and thought it would work. I am delighted it did, using a slow-cooker conversion chart you can convert a lot of recipes into slow-cooker recipes. We love Spanish Flavours and Spanish style food in this house so converting this recipe was a must for me.
Amazing Slow Cooker Catalan Beef Casserole – My Way!
So I decided as I am converting it to a slow-cooker recipe I will just make it my own way. Reading recipes is not my forte! I have a confession to make, I was always in trouble Home Ec. Because I was taught how to cook at an early age I would make a recipe how I was taught it, not from the book. My teacher would get so irritated but hey I know who’s got eaten after class!!
We had her food once on a Geography Feild trip – it was so bad teachers and pupils snuck in take-out to eat!! Being a teacher doesn’t make you a good cook.
So here is my version of Slow-cooker Catalan Beef Casserole

This was originally a Lidl recipe which I updated to go in my Slow cooker using the conversion chart below and throwing a few extra things in it

- 250 g red onion peeled and chopped
- 600 g stewing beef
- 2 Peppers de-seeded and cut into thin strips
- 1/2 packet Sundried Tomatoes Sliced
- 1 piece Garlic -peeled halved and thinly sliced
- 1 Courgette peeled and chopped
- I glass Red Wine or Beef stock
- 75 g Chorizo
- 2 tbsp Roasted Tomato and Red Pepper Relish
- 75 ml olive oil
- 1 tbsp Paprika
- 1 tbsp Balsamic Vinegar
- salt and pepper
- Splash some olive oil in the pan and brown your Beef then throw in your Chopped chorizo
- Put the Beef and Chorizo into the slow cooker and fry the garlic, onions, peppers, sun dried tomatoes and courgette in the pan.
- Place them in the slow-cooker too and add your Paprika to the pot
- Mix the Roasted red pepper relish with a glass red wine or beef stock and pour into the slow cooker and mix together well.
- Cook in the slow cooker for on high for 3 hours or low for 6 hours, Season with salt and pepper as preferred.
- Serve with Pasta or Rice to serve.

This looks as if it is a great slow cooker recipe. I would imagine that the wine gives it a nice depth of flavor.
