Bacon wrapped Pork and Apple Meatloaf
A tasty alternative meatloaf perfect with Colcannon
apple juice or cider
mixed herbs and black pepper
bag Breadcrumbs or make your own gluten-free bread crumbs
of streaky smoked bacon
Preheat the oven to 180 °C / 350°F Gas 4.
Peel and grate the apple, and finely shred the onion. Place in a large bowl with the mince, bacon, apple juice, egg, salt, and herbs.
Pour bread crumbs into the meat mixture, and mix with your hands until well combined.
Line the tin greased loaf tin with the streaky bacon
Spoon the mixture into the tin and wrap with the bacon
Bake in the preheated oven for 1 1/2 hours. Leave to stand for 5 minutes. Drain off any excess fat before slicing and serving with potatoes, veg and gravy.
