Easy Seafood Paella
This is my Snapshot and Snippets version of Paella and is tasty and east to do all in one pan. And no snails!

  1. In a large deep pan or skillet, heat 3 tbsp olive oil.
  2. Turn the heat to medium-high and add the chopped onions. Saute the onions for 2 minutes then add the rice, and cook for 3 more minutes, stirring regularly.
  3. Now add the chopped garlic and the seafood mix cooking water.
  4. Stir in the saffron and it’s soaking liquid, paprika, cayenne pepper, and salt.
  5. Stir in the chopped tomatoes, frozen peas, green beans and yellow pepper.
  6. Bring to a boil and let the liquid slightly reduce, then cover (with a lid or tightly with foil) and cook on low heat for 20 minutes.
  7. Uncover and spread the prawn over the rice, pushing it into the rice slightly. Add a little water if needed.
  8. Cover and cook for another 10-15 minutes until the shrimp turn pink.
Recipe Notes

Serve the paella hot with some home-made sangria. I will be sharing the recipe with you in my Newsletter this week
