Instructions
  1. Preheat oven to 180 °C /350°F and line a 9×5-inch loaf pan with greaseproof paper.
  2. Mash banana in a large bowl.
  3. Add in the Vanilla, egg, coconut oil, sugars and mix thoroughly
  4. Add in the Maple syrup
  5. Last add baking powder, salt, almond flour, gluten free flour blend and oats, and stir.
  6. Add mix to the prepared baking tin and add the sliced banana and walnuts to the top if you are decorating
  7. Bake for 1 hour – 1 hour 15 minutes. When ready, it should feel firm and be crackly and golden brown on top.
  8. Let cool completely before cutting or it may fall apart.
  9. Store leftovers in a covered container for up to a few days. Slice and freeze for longer term storage.
