Onto the recipe – I am a big fan of warm curries in winter and this one was perfect for warming you up and the smell was divine.
Why did you chose Quorn
I chose Quorn as the base for my Quorn coconut curry recipe for several reasons. The main reason is I like it. But you can get Vegan Quorn which is great for Veganary. And it is relatively cheap and I know it is low in calories and fat.
Quorn is made from Mycoprotein. This is an excellent source of high-quality protein and contains all the essential amino acids for adults. It is high in dietary fibre (important for the digestive system), low in fat and saturated fats and contains no cholesterol or trans fats at all. Mycoprotein is low in sodium, too.
How do you make Cauliflower rice?
I love cauliflower in a curry anyway and cauliflower rice is the perfect low-cal substitute for rice.
It is also easy to make.
There are two techniques for making cauliflower rice. You can either use a traditional box grater with the medium-size holes traditionally used for cheese, or a food processor with the grater blade to blitz it into small pieces. With both
This cauliflower rice can then be microwaved in a flash. Or pan-fried in moments or roasted to create a light, fluffy portions. Each 100g portions, which contain just 25 calories each!!
I love to add a little Tandoori spice to mine for an extra kick but plain is just fine.
