Epically Easy and Tasty Tortellini recipe
This is an easy but ever so tasty Tortellini recipe – perfect for mid week and available in a Vegetarian and Cheesy version

Ingredients
Tomato and Spinach Tortellini
For the Cheesy version
Instructions
  1. In a pan add the olive oil and the garlic and mushrooms and soften them
  2. Add the passata and diced tomatoes , tomato paste and red pepper flakes and stir through
  3. Add your tortellini and Spinach and tip the whole lot into your slow cooker. Pour over the vegetable stock
  4. Cook for two hrs on high or 4 hours on slow
For the Cheese Sauce
  1. In a saucepan add the low- fat soft cheese, mozzeralla and start to mix add a little milk to loosen up if too thick.
  2. Add in handfuls of the cheddar and parmiganino reggiano and mustard to taste
  3. Cook until the cheese is melted and a constitency you like. Pour over your cooked Tortellini
