Springtime is finally here, although I hear threats of more snow, really that not fair Mother Nature. My poor plants are suffering. But at the moment I am enjoying the Springtime with Springtime Meal Planning. I am looking at lighter recipes and quick recipes that give me time in the garden while the sun shines.
This week’s Special in Ireland
Red are the products I am buying and red * are for lunches and snacks
MEATS – €3.00 – Cod Fillets with Peri Peri, Diced Turkey with Peri Peri. €4.00 Ham Fillet, Whole Chicken, Lamb chops, Stewing Beef.
€5. – Rib Steak fillet
VEGETABLES 49c – Cherry tomatoes, Cucumber, Swede, Celery 79c – Apples, Kiwis and Oranges
VEGETABLES 49c – Lettuce, pears, Garlic and Limes – 79c Bananas and Red Apples
MEATS – €3.00 Salmon Fillets, Mince,Turkey strifry/Steaks, Round steak, chicken fillets and small Ham fillet
I am going to include what is in season from the garden or the hedgerow from now on as I grow my own vegetables to save money.
In the Organic Garden – Kale ( the last Picking), Spinach, Lettuce, Spring onions and Rhubarb

This Monday I am making our go-to Carbonara – I have the ingredients and I am loving the bacon pieces from Lidl – they are €1.99 and so handy in recipes
Tip = Pick recipes you know your family love this recipe never fails in our house
I am working on Tuesday so I am relying on my trusty Slow cooker for this Amazing Slow Cooker Catalan Beef Casserole which I will serve with rice.
Tip – Slow-cooking is so handy it frees up your time and saves money
Wednesday I run all my errands and I want something quick and cheap like Quick and Easy Pork stir-fry with Cashew Nuts
Tip – When you are busy instead of reaching for a ready meal or take-away menu cook something quick and easy.
This Prawn and Spinach Pasta is perfect when you need a quick tasty meal and if I am at work that is what I want, this recipe is exclusive in my Newsletter this week
Tip- Make Dishes Healthier by using Wholemeal Pasta which is filling and has a low GI
Nothing nicer than a take-away but what if you can’t afford one – make your own Vegan Butternut Squash and Spinach Korma with Quorn
Tip – Make your own take- away food you will save lots and Quorn is on Special offer in Lidl this week
One pan meals make life so much easier if you busy at the weekend and this is delicious Easy Lemon Chicken with Asparagus and Potatoes uses Asparagus which is in season at the moment.
Tips: Simple meals are great is everyone is on the go
We will be having a Roast chicken and vegetables on Sunday and I always do a dessert on Sunday and with Rhubarb in the garden, I have to make Almond Strawberry Rhubarb Pie it is delicious.
