This week I am working on my April Showers Meal Planning menu – gosh this Spring is taking its time to get going this year. It is dull and wet and comfort food is my go to on dreary days like these.
This week’s Special in Ireland
Red are the products I am buying and red * are for lunches and snacks
MEATS – €3.00 – Chicken Goujons, Turkey steak, Bacon Loin, Part-boned chicken breast, Salmon Darns, Mince, Meatballs.
€4.49 – Pork Loin Steaks
VEGETABLES 49c – Swede, Celery, Tomatoes and Cucumber 79c – Apples, Kiwis and Oranges
VEGETABLES 49c – Lettuce, pears, Garlic and Limes – 79c Bananas and Red Apples
MEATS – €3.00 Salmon Fillets, Mince,Turkey strifry/Steaks, Round steak, chicken fillets and small Ham fillet
I am going to include what is in season from the garden or the hedgerow from now on as I grow my own vegetables to save money.
In the Garden – Kale, Spinach, Lettuce, Spring onions and Rhubarb
In the Hedgerow – Wild garlic – Be careful if picking wild plants only do this if you are sure you know what you are looking for – Wild garlic grows abundantly here in Ireland- to find out more read my newsletter.

This is Cheap and Cheerful Chilli Sausage, Potato, Bean Casserole is such perfect comfort food and is perfect if you’re on a budget or feeding a lot of people in one go, as the ingredients are cheap, and you only need seven ingredients to make it: oil, potatoes, sausages, onion, green pepper, A tin of kidney beans and Chilli con Carne.
Tip = save money by using good quality sausages on special these were €1.99
I am planning on making this tasty wild garlic and potato soup – the recipe is in this week’s newsletter ( sign up below) and is it so good and nourishing. And I have a great guide on How to Bake your own Bread for Beginners
Tip – Not all meals need to be huge a hearty soup with Home-made Bread is filling
Wednesday I run all my errands and I want something quick and cheap like Gluten-Free Mac and Cheese with Bacon bits
Tip – When you are busy instead of reaching for a ready meal or take-away menu cook something quick and easy.
I love my slow-cooker it is perfect for when I am at work or out for the day. And Tummy Warming Beef or Veggie Casserole is a family Favourite and so comforting on a damp day.
Tip- The slow-cooker is perfect for tougher cuts of meat as it softens them up
Nothing nicer than a take-away but what if you can’t afford one – make your own Stuff Crust Pizza. It is not as hard to do as you think and kids love to design their own pizza.
Tip – Make your own take- away food you will save lots
One pan meals make life so much easier if you busy at the weekend and this Easy Skillet Garlic Chicken and Potatoes is delicious and easy
Tips: Simple meals are great is everyone is on the go
We will be having a Roast chicken and vegetables on Sunday and I always do a dessert on Sunday and with Rhubarb in the garden I have to make Tasty Rhubarb & Custard Oat Crumble it is easy and such a tasty comforting dessert.
