Acai Vegan Breakfast Waffles

Vegan waffles can just as light and tasty as the normal waffles and think how good they are for you !! My teenagers didn't notice the difference and the addition of Acai powder gave them a heavenly taste and a slightly purple look ! 


The Acia powder is from Acai Berries are literally loaded with antioxidants; in particular they are especially rich in “anthocyanins”, flavonoids that give these berries their deep purple hue. Plants produce anthocyanins to protect their cells from ultra-violet radiation, disease and sun damage.

Ingredients 

  • 150g Plain Flour
  • 50g Rolled oats
  • 2tsp Baking powder
  • a pinch of salt
  • 2 tbs of Maple syrup
  • 2 tbs Acai Powder
  • 2tbls sunflower oil or melted coconut oil
  • 300ml Almond milk with 1 tsp apple cider vinegar
  • 2tsp vanilla

The How to Bit 

  1. In a Jug add the almond milk and the vinegar to make almond milk buttermilk essentially ( it will look like it is curdling ! )
  2. Then add the oil, vanilla and the maple syrup to the almond buttermilk you made.
  3. In a mixing bowl add your flour, oats, baking powder, acai powder, and salt and make a well in the middle.
  4. Pour your wet ingredients into the mixing bowl slowly and mix the dry ingredients from the side.
  5. Set the mixture to one side to settle and set up your waffle maker
  6. I set mine to high as we like them crispy and I find that vegan waffles take longer to cook than normal waffles
  7. Pour a ladle full of mixture into the waffle maker and close and hold your breath ( or is that just me !)

Serve with Warmed blueberries and Coconut soy yoghurt - delicious
