Meal planning is fantastic for people on a budget. You only buy what you need, you can shop the “specials” in the supermarket and you use what is in your pantry. Sometimes we all need to tighten our belts whether it is to save for something special or because needs must. Meal Planning on a budget doesn’t mean you have to survive on beans. You can still provide healthy food for your family. And I provide Free Meal Planning Printables to help you
I have done just that this week been careful to keep to a budget. Easter, of course, blew the budget big time. All that chocolate !! So time to go back to healthy budget-friendly food that won’t break the bank or the waistline!
This week’s Meal Planning on a Budget costs €30.91 for all you dinners which worked out at €4.30 a day and I usually feed 4 to 5 on for dinner. That is a lot cheaper than buying takeout. I have even created a shopping list below if you want to try this Menu for yourself ( note all prices are in Euros and based in Ireland. Also this is just for dinners you will have to add the rest of your shopping on.)

How to Keep on Budget with your Menu
- This menu was based on shopping the Specials in each of my local Supermarkets.
- Knowing which Supermarket is the cheapest for each product
- Never Shopping when Hungry – this one is Vital !!
- Don’t buy more than you need.
- “Shop” from your own freezer, fridge, and cupboard first

This Easy Pork Stir fry is a tasty dish and you can serve it with Rice or Noodles, you can leave out the Cashew Nuts to save money or if you have a nut allergy.
TIP – Frozen Vegetables can be very reasonable and stir-fry veg will give you vegetables you normal wouldn’t have in your cupboard like water chestnuts.
Mince is on Special in Aldi and Supervalu this week and this Slow-cooker Spaghetti is a great way to use them and is a family favourite.
TIP: Quorn Mince or Meatless mince is 1.99 a bag in the frozen section why not try it and make your meal Vegetarian !!

I have finally cracked the recipe for Gluten Free Pizza and I shared it in my Newsletter this week. If anyone wants that recipe you can sign up to Snapshot and Snippets or if you want stuffed crust Pizza you can find that recipe here. I have included gluten free flour on my list but if you are lucky enough not to eat it you can remove it. The Recipe for low-fat wedges is here.
TIP Making your own pizza is cheaper than buying take out and you can adjust it to your families tastes so if you need gluten free or wholemeal or vegan cheese you can do that.
Slow-cooker Beef Goulash is a great way of cooking cheaper pieces of beef as cooking for a long time brings out the flavour
TIP: Did you know that slow-cooker save you money as they use less electricity that your oven.
Pasta is always a quick and cheap meal and this Chorizo and Garden Vegetable Pasta is a breeze to make.
TIP: Chorizo sausage is cheap and very tasty to throw into dishes to add flavour
Slowcooker chilli is great because you can serve it so many ways – on Nachos, on Baked Potatoes , on Rice or in Tacos or wraps the choice is yours !!
TIP: Grate some dark chocolate in your chilli to take it up a notch
Spatchcock chicken is down to €3.00 this week in Lidl and I will be making that for Sunday dinner. And Rhubarb is definitely still in season as it seems to be available cheap everywhere. I will have this tasty Rhubarb Oaty crumble recipe for you on Friday
