The last week of January and we are feeling the pinch of trying to eat cheaply but also eat healthily it is a tough balancing act for any family. Which is why I put together this Healthy and Cheap Meal Planning plan using the supermarket specials in Ireland this week.
These recipes are all healthy but using the specials the price it kept to a minimum. Saving you money while feeding your family healthy meals.

How to stick to your meal plan and keep costs down
- Never Shopping when Hungry – this one Vital
- Write a List and Stick to it.
- Avoid packaged meals – cooking from scratch doesn’t always take time.
- Eat plenty of fresh vegetables and fruit by shopping the special offers
- Try to add a Meat-free meal to your diet at least once a week
- Shop in budget stores Aldi and Lidl which keep their prices low and have weekly special buys

Cheap and Healthy Meal Planning – recipes
Mince is on special in nearly every Irish Supermarket this week and this Cottage pie with Sweet potato is full of flavour and uses Sweet potatoes – also on special in Lidl this week
Tip: You can swap beef mince for meatless mince which is 1.99 a bag
I am sharing this tasty Baked Lamb steaks with cherry tomatoes in my newsletter – sign up below – this one pan dish is fabulous on a busy evening
Tip: Look out for special offers to save money – these lamb steaks are €3.00 in Lidl this week
This Tasty Easy Tomato, Basil, Mozzarella Puff-pastry Slice is so easy with frozen puff pastry and as it is now 89c a pack it definitely won’t break the bank. Low fat Mozerella makes this a heathier meal
Tip – Load this with Ham and sliced mushrooms to make it even more special
Another thing on offer this week is Prawns in Lidl. This amazing Prawn Spicy Gumbo is fabulous for warming you up and healthy to boot
Tip: This recipe calls for Andouille sausage but you can use some chorizo instead which you can get for 1.99 and us great for adding flavour to lots of dishes.
On Friday I will be sharing this Lentil and Sweet potato recipe with here – easy to make and €1.50 a serving – it is definitely cheap, cheerful and won’t break the bank. So pop back here on Friday for this tasty curry
Tip: Add Beans and Pulse to meals to add fibre and protein to your diet
If you picked up Chorizo for your Prawn Gumbo on Wednesday use the rest of it in this tasty Chorizo and Garden Vegetable Pasta which is definitely cheap and healthy. Pick up a bag of frozen Mediterranean veg from Supervalu if you haven’t got garden veggies
TIP: Use ingredients more than once if you get a bargain
On Sunday I will be cooking our usual Roast Chicken -Lidl has a stuffed chicken on Special this week. I will serve it with lots of Veggies from the garden and for dessert. As Apples and Pears are on offer this week I will be serving this tasty Mango Ice-cream has two ingredients and it Vegan-friendly. It is made by freezing chopped old banana’s I always do this if they are going brown. You peel and chop your mango. Add the mango to a blender with you frozen banana pieces and blitz until smooth. Place in a freezer container to store or eat immediately (which is what happens here). Mango’s are on Special offer in Lidl for 49c this week.
Tip- You local greengrocer might sell off older bananas cheaply. I know our’s does and you can chop and freeze them for smoothies, ice-cream, and baking.
Tip: using special offer fruits in your dessert mean you can have a treat with your Sunday dinner
