Meal Planning is a great way to save money as you shop only the special offers and stick strictly to a list. Also, I suggest going shopping when the kids are occupied elsewhere as kids at the supermarket are experts at manipulation and dumping things in the trolley when you’re not looking. Even when they are teenagers!!

How to Keep on Budget with your Menu
- This menu was based on shopping the Specials in each of my local Supermarkets.
- Knowing which Supermarket is the cheapest for each product
- Never Shopping when Hungry – this one is Vital !!
- Don’t buy more than you need.
- “Shop” from your own freezer, fridge, and cupboard first
- Leave the kids/ teens at home.

I picked up Aubergines last week in Lidl when they were down to 49c.
I was just going to chop them up and throw them in a pasta dish until I saw this Awesome Gluten Free EggPlant Parma Dish from The Professional Mom Project. She kindly let me share her recipe and use it in my Meal Plan – thank you, Nicole. As you will know one of my daughters is Coeliac and this dish is perfect for her and I have yet to meet a teenager that doesn’t like cheese!
TIP – Always check the Vegetables that are on special and work them into Meals
I will admit considering what big pasta fans my kids are I have NEVER made Mac and Cheese. Basically, it is just not a dish that was common when I was growing up. But I promised my girls I would try it and I found Gluten Free Macaroni so you knew it was going to happen. And if it is a success I will write it up mind you I bet most of you know how to make this dish.
TIP: Pasta is cheap and filling and you can get gluten free pasta readily
Wednesday is Always Pizza night I think I would be disowned if it wasn’t kept a tradition. My Youngest like Bar-be-que sauce, chicken and Bacon and my eldest is a Margaretta fan and must have gluten free.
I have finally cracked the recipe for Gluten Free Pizza If you want stuffed crust Pizza you can find that recipe here. I have included gluten free flour on my list but if you are lucky enough not to eat it you can remove it. The Recipe for low-fat wedges is here.
TIP Making your own pizza is cheaper than buying take out and you can adjust it to your families tastes so if you need gluten free or wholemeal or vegan cheese you can do that.
Chicken Breast and Chicken Goujons are on Special in Lidl this week and I have two girls that love Chicken Wraps and Fajitas so I am making them on Thursday serve them with Mexican Rice and you have a winner. Chillis, Avocados, Yellow Peppers and Red Onions are also on special so this dish will be cheap this week and teenagers will love it. If they don’t want Meat, leave it out and fill with Veggies and Beans.
TIP: Teenagers can go through phases so meals that can be easily adapted to someone’s taste, like wraps are perfect.
Trying to get kids and teens to eat fish can be hard but I have yet to have a teenager refuse these tasty Cod and Leek Cheesy pots maybe because Cod is the fish they know the most. But if you can get kids and teens eating fish do it is so good for them and great for theirs brain development. I am lucky mine would eat your hand off for lots of fish with Salmon, Tuna, and Whitefish being firm favourites.
TIP: Try and get fish into their diets once in a while it is so good for growing bodies.
This tasty Turkey Burger with Sour Cream and Pesto was an Exclusive recipe a couple of weeks ago in my Newsletter. I am cheating this week as Turkey Burgers are on sale in Lidl and I am making it with just the sour cream and pesto Sauce.
You make it by mixing a 2 tsp of Pesto into sour cream and put it on your burgers with Baby Leaf Spinach. Serve with Sweet Potato fries for a healthier version of that Teen favorite Burgers and Chips
TIP: If you can convert your teens to the healthy version of a dish do for their health.
For Sunday Dinner I am going to make Peri Peri Roast Chicken in the slow cooker – mine love it and it is so tasty and fairly easy to make and they devour it. I serve it with Creamy potatoes and salad. And I asked my daughter what her favorite dessert was and the resounding answer was Cheesecake and I know for a fact that she loves Kinder Bueno so Lower-fat Kinder Bueno Cheesecake it is.
How to avoid Hungry Teenager’s meal Planning Blues
The best way to feed teenagers and not have complaints is it to have handy snacks available – mine are currently going mad for watermelon and Carrot Sticks with Tzatziki, also popcorn is a favourite. I have smoothie mixes in the freezer too which helps. Having things that easy to make like Cappelletti and Noodles meals they can whip something up quickly and I always have tuna in springwater in the cupboard.
