How is your Monday going? Hopefully, better than mine which has been a game of catch-up. But I am finally ready with my Meal Planning Monday Valentine’s day Edition! Here is this week’s Meal Planning Monday Valentine’s day Edition
Monday Valentine’s Day Week
Today I am taking things easy on myself and we are having a family favourite. My slow cooker Spaghetti Bolognese is a winner as it is easy and I know my kids will wolf it down. Even better make it with Meatless mince and you have a perfect vegetarian version
Tuesday – Valentine’s day
Valentine’s day it’s time to spoil the ones you love and this Chicken and White wine recipe is just perfect for that. Also on my Valentine’s menu, I have a cute Strawberry heart pavlova recipe for you below
Strawberry Valentine’s Day Pavlova
- 3 large Egg Whites
- 1 tablespoon Cornflour
- White Vinegar -1 teaspoon
- Vanilla Essence -1 teaspoon
- 4 tablespoons Boiling Water
- 350g/12oz Sugar
To decorate300ml/1/2 pint Cream
The How to Bit:
- Put all the ingredients into a bowl and beat until thick.
- Shape meringue into a heart on baking parchment or for a neater look pipe it
- Bake in preheated oven at 120°C/250°F/Gas Mark 1/2 for 1 hour.
- Reduce heat to 110°C/225°F/Gas Mark 1/4 for a further 30 minutes
- Allow to cool. Place on serving plate and fill with whipped cream and Strawberries with a strawberry sauce.
RECIPE NOTES: If you have problems making a heart shape free-hand draw a heart on your greaseproof as a guide.

Wednesday – Pizza Night
Want to carry on the romance you could use my Pizza dough recipe to make a Heart Shaped Pizza for the ones you love! Much as I like the Easy Tomato, Basil, Mozzarella Puff-pastry Slice too much of a good thing can be bad so it will be Pizza this week. And a big bowl of My Low -fat Wedges .
I am sure regular readers know I adore my Slow cooker Recipes and would be lost without my slow cooker . This tasty Spice Pork Casserole is perfect for a busy work day and perfect during winter for warming you up.
This Quick Bacon and Mushroom Pasta does exactly what it says on the tin. It is a speedy way to get dinner on the table and my lot love it, mind you they would eat pasta every day!
Slow-cooker Chilli was the first ever recipe I tried in the slow-
cooker. It has been a firm favourite since you can make a meat or a vegetarian Chilli option. You can serve Slow cooker chilli multiple ways, with Nachos, in wraps on a baked potato or as someone I know like it on a Hot Dog !!
I will be cooking my usual roast dinner and I plan on making these luscious Double Chocolate chip Muffins for practice as Next Monday is National Muffin Day. I will make a new Muffin recipe for next Monday so make sure you come back for that !!
