Meal planning is fantastic for people on a budget. You only buy what you need, you can shop the “specials” in the supermarket and you use what is in your pantry. Sometimes we all need to tighten our belts whether it is to save for something special or because needs must. Meal Planning in Summer on a budget doesn’t mean you have to survive on beans. You can still provide healthy food for your family.
You can buy fresh summer food even on a budget! And as it is May time to go back to healthy budget-friendly food that won’t break the bank or the waistline!

- This menu was based on shopping the Specials in each of my local Supermarkets.
- Knowing which Supermarket is the cheapest for each product
- Never Shopping when Hungry – this one is Vital !!
- Don’t buy more than you need.
- “Shop” from your own freezer, fridge, and cupboard first

Last week I picked up extra beef pieces from Lidl and popped them in the freezer. I am making this Low-fat Beef Stroganoff in my slow cooker today as it is so warm in Ireland and I want to spend time in my garden.
TIP – Using your slow cooker in summer means the kitchen doesn’t heat up! And gives you plenty of time to enjoy the nice weather.
Chicken fillets are on Special in Lidl for 2 euros also we have a Fresh Today up the road that sells 10 fillets for €9.50 which is amazing value. So I am making Chicken Fajitas with fresh vegetables.
TIP: Shopping around the Super Market specials is a great way of keeping the price down you can find them online these days.
This Easy Tomato, Basil, Mozzarella Puff-pastry Slice is a tasty alternative to Pizza served with a tasty salad it is great.
TIP Frozen puff pastry is cheap at 89c in Lidl and Aldi buy a few for your freezer it is so handy!
These tasty Glazed pork chops are great in Summer if you serve them with tasty new potatoes and a green salad.
TIP: Take a “winter recipe” and serve it with new potatoes and fresh greens for summer
Sometimes you don’t have to make your own every time and these tasty burgers from Lidl are on Special this week at 2 euro. Serve with low-fat coleslaw and lots of salad and Homemade Wedges.
TIP: Jazz your burgers up with low-fat coleslaw it is so tasty!
Both steak and Sweetcorn are on Special offer this week and that sounds like a great excuse to use the Bar-be-que. Make some fresh coleslaw and pop some baked potaotes on there too and you have a tasty meal.
TIP: If you wrap you sweetcorn in tin foil with flavoured butter and cook it on the Bar-be-que it is amazing.
Whole Chicken was down to €3.00 last week in Lidl so I pick up two and one is in the freezer for Sunday. I am going to try it in the Slowcooker and see if it is good. Also this weekend I am sharing the recipe for these tasty Chocolate Macaroons with hazelnut filling and lots more recipes for Afternoon tea !
