And I am back Menu planning again – why because sometimes life changes and throws things at you you weren’t expecting. In my case it is being reduced to part time work for the time being and as such we must again tighten our belts and Menu Planning is a great way to do that, you can read all about it in my How to start Menu Planning Post and you can find more menus to tempt your taste buds over at I am an Organizing Junkie.
Monday – today in Ireland it is awful weather, there is a Storm called Harry currently trying to batter down the fences. It is also on of my days off and I am trying to catch up on the housework finally so I am opting for an old favourite slow-cooker recipe

Tuesday – I am in work so I am going to rely on some left over Slowcooker Chili I have in the freezer, the great thing about this Chili is that is freezes well and keeps all the flavour. I have also found that you can make this Chili just as well with Meat -free Mince and it is just as good.
Wednesday -Thanks to the Chinese New year happening on Monday the 8th there are lots of special offers in the supermarkets on Asian food and I am taking full advantage with a Chicken Stir-fry with wholewheat noodles
Thursday- I am working and maybe shopping too – so Pizza Night is on the cards I am trying to make it healthy serving with Salad.
I have lots of fish in the Freezer and this fish pie is gorgeous and such comfort food while being healthy, so I am going to make that as I will be home on Friday. The recipe for Fantastic Fish Pie is here.
Saturday – I want something quick and easy and that everyone will eat so Quick and Easy Bacon and Mushroom Pasta is a winner – get the recipe HERE
Sunday – It will be a roast of some sort depends on the Special offers in Aldi and Supervalu and I have got some cooking apples to use up so I plan on making this Gorgeous Apple Cake you can find the recipe HERE
