I am sorry about last week – I spent most of Monday trying to find a plumber and a repair man as the heating and the washing machine decided to go at the same time. In fact last week I lurched from one disaster to another and Menu Planning Monday or any other day went out the window.

So here is this week’s menu it is basically full of warming comfort food as the weather is miserable in Ireland at the moment.
I currently have fish in the fridge that has been in the freezer and needs to be used up – so I will have to make this Fish Pie .
It is great with Baked beans and is an adaptation of a Jamie Oliver recipe.
Last week I pick up some pork chops and I will be making the glazed pork chop recipe from Budget Bytes they are delicious and cheap what is not to love about that.
Sometimes you need an old faithful, that you know every one like, to throw together and our Bacon and Mushroom Pasta is just that.
Using shop brought pastry these are much easier to make than you think all you do is cook up the filling in the slow cooker and pop on a lid of pastry and pop it in the oven. The recipe is HERE
I have the ingredients on hand in the freezer and the cupboard for Chicken in Black Bean Sauce and Friday night used to be take away night – served over a bed of wholemeal noodles and you have a tasty and filling meal.
I have some home-made burger patties in the freezer all I need to do is whip up some tasty wedges and you have a quick and easy meal that everyone likes.
Yesterday thanks to a special on Beef roast in Aldi we had roast beef and Yorkshire pudding and it was divine – if the special is still on we will be having it again.
