This weeks menu will be mostly from the freezer as it is the end of the Month and bills have to be paid. This is where menu planning and Freezer cooking come in so handy especially if you have to be a bit careful.
MONDAY – Enchiladas
I froze the left over Slow Cooker Chilli from last week so I took it out this morning to defrost, made up a cheese sauce and wrapped the whole lot and popped them in the oven to make Enchiladas.I served it with salad and it went down a treat.
TUESDAY – Thai Chicken stir fry and Coconut Rice
Yes I know that is not chicken in the picture but the coconut rice is the main player in this dish – honestly I could just eat it in a bowl by itself 🙂 The Thai chicken is a kit I picked up in Aldi I will let you know if it is nice next week.
WEDNESDAY – Chorizo and Garden Pasta
As you know this household loves pasta and this Chorizo and Garden Vegetable dish is so easy to throw together, which is most probably why it is one of my top 5 posts 🙂 Just pop some vegetables in a pan with Chorizo and yummy 🙂
THURSDAY – Stuffed pork chops with mash and veg.
I will glaze and stuff these pork chops with apple, bread crumb and cheese – so tasty and so easy to do and guaranteed to be eaten.
FRIDAY – Fantastic Fish Pie
Aldi had fish on special offer last week so I grabbed some for the freezer and this Fish pie is excellent for using it up I have know kids that will only eat fish in finger form devour this pie, it is that good !
SATURDAY – home-made burgers and wedges
The great thing about home-made burgers is you can make them with whatever you like so beef with onion and pepperjack cheese or veggie burger with salad or turkey burgers with relish. I also loke making wedges as you can keep them plain or spice them up with cajun or garlic salt.
SUNDAY – Roast Chicken with lemon Cous Cous and Salad and Nectarine Sorbet for dessert.
I love light meals in summer and Lemon cous cous is perfect with chicken or fish, team it with a salad and you have a wonderful summer meal. Follow it up with this delicious Nectarine sorbet and you are on to a winner.
