It is Monday again already – time seems to be slipping by so fast. I have been making soup ( more on that in a minute ) and putting together this weeks menu for you. Menu planning Monday really does help keep my spending at the supermarket under control and means less food waste if you are interested on learning more about the process click on the link – HERE.
And if you want to see more examples of Menus – link up with I’m an Organizing Junkie which is where I first learnt about it.
THIS WEEK’S MENU – MARCH 9TH – MARCH 15th
So here is our Menu Plan for this week, you might think some thing is a bit familiar about it and I will explain in the day comments also I have made I big batch of Chicken and Mediterranean Vegetable soup which I am currently writing up the recipe for – I wish computers could convey smell because this soup is divine and tastes just as good.
We get the yummiest 80% pork sausages from our local butcher and combined with a creamy mash and onion gravy and lots of veggies you have a tasty dinner which will go down well on this cold , wet, blustery day.

How Yummy does that look?- I have lamb mince in the freezer and Pinterest came up trumps with this gorgeous looking recipe from the Donna Hay’s website for baked lamb and oregano meatballs.
I just happen to have low fat mozzarella in the fridge too.
Haven’t done Easy Bacon and Chorizo Pasta with spinach recipe in a few weeks and I know how well it went down the first time I made it. I also know that it is pasta two mights on the trot but my youngest would live on pasta if she could and we use whole wheat pasta to make it a healthier option.
Thursday we have an appointment in town so something I can throw in the slow cooker is ideal and this Chilli always turns out great – the recipe is here along with a nice recipe for Poached pears.
Well the more observant of you might wonder why I am making Prawn Hoisin Stir Fry again – well truth is sadly my eldest couldn’t make it home last weekend and was stuck covering a shift for a friend because that is the kind of great young person she is. So the ingredients are still in the freezer and the store cupboard and at least it means I won’t have to pick them up this week – less shopping is always a good thing.
Home-made burgers and Fries is always a winner – no it might change as I am not sure what either of my teenagers have planned this weekend but something like this is easy to throw together.
Typically Sunday will be a Roast dinner and for dessert will be Shelia’ pudding which is a family favourite adapted from an Older Jamie Oliver book – I have made a printable recipe for it HERE
Hope you have got some ideas and I will be posting that recipe for soup by Friday I promise it was too good not to share.
