And Menu Planning Monday Feb 23rd is back – last week was half term and my youngest daughter’s 15th birthday so all planning went out the window as teenagers drifted in and out of the house and ate everything in sight.

Monday Feb 23rd
We are having Easy Skillet Garlic Chicken and Potatoes tonight – The recipe is HERE this is the most popular recipe on my blog and it is easy to see why such a comforting dish and when chicken legs are on special offer in the Supermarket it is cheap as well.
We have chorizo, bacon so what better than my Bacon and Chorizo Gratin it is also fairly easy and a warm comforting dish and as I am feeling the cold badly at the moment due to a broken boiler, we need all the comfort food we can get.
Spaghetti bolognese – it is an old family favourite and we have mince in the freezer I make my own sauce after finding out how much sugar is in the jarred varieties – it is a frightening amount and a pasta sauce is not that hard too do.
Sometimes Breakfast for dinner is just so fun and as last week was pancake day at that went down so well why not do it all again and you can have anything usually we have bacon, sausages, eggs, beans and the like. There is a special offer on fish in our local Supermarket this week and we love fish in this house so Home-made fish and chips – I make my own beer batter and chunky home-made chips.
The leftovers plan on a Saturday is working well and if there is nothing they like I have some leftover pizza dough in the fridge.
I will check out what meat is on special and pick up something for Sunday. And I plan on making Brownie’s for after
BEST EVER BROWNIES
- 185g unsalted butter
- 185g good dark chocolate
- 85g plain flour
- 40g cocoa powder
- 50g white chocolate chips
- 50g milk chocolate chips
- 3 large eggs
- 275g golden caster sugar
THE HOW TO BIT
- Put the butter and the dark chocolate in a bowl and melt over a pan of gently simmering water.
- Pre-heat the oven to 160C/gas mark 4.
- While waiting for your chocolate and butter to cool slightly. In a separate bowl whisk together the eggs and the caster sugar until pale and fluffy.
- Mix in the cooled chocolate butter to the egg mixture and then sift the flour and the cocoa into the bowl and fold in gently.
- The fold in the white and milk chocolate pieces or chips and then pour the mixture into a 20cm squared tin that is greased and/or lined.
- Bake for 20-25 minutes or until you can pull a knife kind of cleanly out of the brownies. Leave in the pan to cool and then slice and serve.
