Welcome Back – Menu planning Monday has been off the menu for awhile, for no other reason than life got crazy and nothing was being organised ! Life is getting back to normal and I am now feeding three. My eldest daughter got sick and moved home to get better. I thought it was about time I better get back to planning. So pleased to say Menu Planning Monday is back with my April 11th Menu and I am happy to have a bit more organisation in my life.

Monday April 11th Menu
Tonight I am cheating a little and trying Aldi’s Caramelised Red Onion and Vintage Cheddar Quiche as it looked so good. Aldi have a new range of summer stuff in and I am loving the new salads.
My eldest adores the Broccoli and Pine Nut salad. I am loving the Orzo Pasta with Slow Roasted tomatoes I could eat a vat of it !!
It is not very summer like here at the moment but I do not care it is Quiche and Salad tonight as I have been painting and fixing things today.
I have taken out Mince to do Cottage’s Pie. I will cook the mince in the slow- cooker as I have work tomorrow.
Chorizo and garden veg pasta the recipe is HERE. I have got some gluten free pasta to try for my eldest as she is suffering at the moment she is newly diagnosed with IBS. She loves pasta but it seems to make her bloat.
Tummy Warming Casserole – yes this is the kind food we should be having in this wet and miserable Irish Weather ! I can pick up some Beef as I saw it on special.
Fish and Chips, not from the chip shop but fresh cod in home-made beer batter and chips served with small spring peas as they are the only ones I can stand.
Beef Dopiaza – Dopiaza is a South-Asian curry dish. It is prepared with a large amount of onions, both cooked in the curry and as a garnish. I have the recipe we use HERE. I haven’t made Beef Dopiaza in awhile as my youngest used to be fussier. The bonus with this dish it is another slow cooker dish which I love.
Sunday – Roast Dinner and I’m planning on making these tasty brownies – I will be posting the recipe this Friday if you like the look of them !! So tune in for that.
