Yes it is a new year and I am back trying to get organised – some things I have down , like my laundry pile is under control and my house is clean but I had slipped on the meal planning side of things and so I am pushing myself and trying to get back into Menu Planning Mondays, if you don’t know what they are link up with I’m an Organizing Junkie – those girls rock if you want to get your life in order.
As you should be able to see from my menu plan below we are eating from the freezer this week a lot – it is the end of the month and it is January so I am trying to spend less if there is no need to do so and we have a lot in the freezer.
Tonight we are having steak and corn on the cob what a treat. We haven’t actually had steak since last summer on the bar-be-cue but our local Supermarket was selling huge pieces for €3.00 and that was a bargain not to miss. I will not be bar-be-cueing though it is freezing out there and I am not THAT crazy.
Tuesday I have pork cut stir fry mix in the freezer and wholewheat noodles – we found these whole wheat noodles a couple of weeks ago and they are so tasty and great if you are trying to stay healthy.
Wednesday – I have promised my youngest lasagne,she is not in the best of form at the moment and Wednesday we have another Dr’s appointment so this will be a treat afterwards

Thursday – I was racking my brains for what to do with the chicken pieces I have in the freezer so it was Pinterest to the rescue – if you are not on Pinterest I highly recommend it and you can link up with me here – Amber@SnapshotandSnippets. I found this gorgeous looking recipe for Chicken with Sun-Dried tomato cream sauce from Damn Delicious I will most probably make it a tad healthier by swapping out things but I have Chicken and sun-dried tomatoes so this looks like a winner.
Friday – It is Pizza Night and we usually make our own I still have some dough in the freezer from last time – this is great with kids as they can pick their own toppings.
Saturday – well leftovers needs no explanation as Saturday can be a bit all over the place with the kids at friend’s houses , so it is a grab what is left situation.
Sunday – I love roast dinners and I have a piece of pork in the freezer that will be perfect with home made apple sauce and an apple crumble for afters – yummy.
As you can see we never plan breakfast – most of the time it is porridge and lunch is usually something simple like a baked potato or home-made soup.

I even picked up this cute meal planner from Aldi last week – I love it and the fact everyone can see it at the fridge means nobody is in the dark about dinner.
