Gluten Free Mac and Cheese with Bacon bits
I only tried to make Mac and cheese this year- it just wasn’t a thing to eat when I was growing up. But when I found Gluten -Free Macaroni I knew I had to try. I experimented a lot until I came up with this dish which my family adores !!

  1. Cook macaroni in large pot of boiling salted water until tender.
  2. In a pan fry off the bacon pieces
  3. Whisk 1/2 cup cheddar, low-fat cream cheese, milk, Parmesan and basil in large bowl to blend.
  4. Add in the cooked bacon and stir through
  5. Add the cooked macaroni and toss to coat. Season with salt and pepper. Transfer to a buttered baking dish.
  6. Sprinkle remaining cheese over. Bake until cheese melts and macaroni and cheese sets, about 20 minutes. Serve warm.
