The funny thing about this recipe is I made it before I wrote it. Then checked if there was a Quick Vegetarian Rogan Josh out there. And you know what, there was, it had to be Jamie Oliver lol !! And boy does his sounds good, I will not lie.
I was tempted to give this recipe a miss but you know what it is good enough to share again !! I love the chickpeas and the Cauliflower in this tasty Rogan Josh. And my version has 179 cals per serving perfect for those watching their weight.
Need a quick tip for peeling Butternut Squash for your Quick Vegetarian Rogan Josh?
Butternut Squash is such pain to peel, so I delighted when I found out this tip. Start by making several large slits through the skin with the tip of a sharp knife.
Microwave the butternut on high for approximately 3minutes to soften the skin.
Remove the butternut squash from the microwave and let it rest for 1 to 2 min, or until it’s cool enough to handle. Then peel with a vegetable peeler- trust me it is much easier !!
