Quorn Coconut Curry with Cauliflower Rice – 5:2 Recipe
A low cal tasty vegan dish which will fill you up – only 223 cals with the cauliflower rice added
medium (approx 2-3/4″ long
2-1/2″ dia), Peppers, sweet, red, raw
Spinach – Raw
Low Fat Coconut Milk, 390 mls ea.
Vegan Chicken Pieces, 280 gs ea.
Coconut fry Light spray
Add Diced onion to a pan sprayed with Coconut Fry Light and cook until translucent
Add the Quorn and Red Pepper and cook through ( you could also add Broccoli if you wanted extra veg)
Make up the curry sauce as per instructions and mix with a can of low fat coconut milk
Add into the pan once the Quorn is cooked through and cover to for 10 minutes
Add the spinach five minutes before serving
Serve on cauliflower rice or White rice
