I belong to a fabulous Facebook group called The Party Bloggers, it is a group of bloggers that run parties for other bloggers online. They had a St Patrick’s day Party coming up. And because I am the Irish one in the group I am sure they expected me to rock it. But the truth is we just don’t go as crazy over St Patrick’s day. In fact, I can’t remember the last time I went to a parade! But, in a true party spirit, I thought I better put my thinking cap and what is more Irish than Irish Cream? These Salted caramel Irish Cream Muffins with dark chocolate chips and a green as they come shamrocks are what I came up with. I hope you like them !!

I actually fell in love with the salted caramel Irish Bailey’s over Christmas, but I couldn’t find it in the shops, it may be seasonal! So I had to improvise by using my trusty Salted Caramel flavouring from Tesco’s. Trust me it is good and a little bit goes a long way ! And also How cute is that bottle ?
The Other thing I got hold of was these Dark Green Muffin cases perfect for St Patrick’s day !!
