It is sunny days and this is our summer here in Ireland. So Summer Meals Meal Planning is the name of the game. The garden is suddenly producing and Bar-be-ques smells are in the air. So how do we enjoy the summer without spending hours in the kitchen and still saving money?
How to Keep on Budget with your Menu
- This menu was based on shopping the Specials in each of my local Supermarkets.
- Knowing which Supermarket is the cheapest for each product
- Never Shopping when Hungry – this one is Vital !!
- Don’t buy more than you need.
- Shop” from your own freezer, fridge, and cupboard first
This week’s Special in Ireland
Red are the products I am buying and red * are for lunches and snacks
MEATS – €3.00 – Back bacon joint, Turkey Steak, Steak Mince, Steak Pieces,
€5.00 – Rib Eye Steak, Chicken Breasts
€4.00 Cod fillets.
VEGETABLES 49c – Baby Potatoes, Turnip, Cherry Tomatoes, Mushrooms 79c – Pineapple, Apples, Banana shallots
SuperValu still has Bar-be-que Meats for €3.00 and they often reduce them to half-price I have a freezer full of chicken in Bar-be-que sauce and Marinaded Pork Chops.
VEGETABLES 49c -Mango, Onions, radishes, Butternut Squash – 79c Blueberries, white potatoes
MEATS – €3.00 – Turkey Burgers, Mince. €6.00 Ham fillet, Roast Beef.
I am going to include what is in season from the garden or the hedgerow from now on as I grow my own vegetables to save money.
In the Organic Garden – We have lots of Salad leaves and the radishes are ready. Salads are a daily addition to the table.

Summer Meals Meal Planning Menu
I love my slow cooker in Summer. I can stick a meal on in the morning and spend the day in the garden and dinner is cooked. Also in summer the slow-cooker doesn’t heat up the kitchen it is win-win! This tasty Slow-cooker Chicken Chassuer is a taste of French cooking at home.
Tip – Don’t pack away the slow-cooker in Summer it is your best friend on hot days.
Glazed Pork chops are delicious and quick-serve them with a radish salad and new potatoes in summer. I also have a great creamy Radish soup recipe for you in the newsletter this week.
Tip: Grow your own veggies like Salads and Radishes are really easy and so satisfying
Wednesday I run all my errands and I want something quick and cheap like Quiche. It is a perfect summer dish is great with Salad
Tip – When you are busy instead of reaching for a ready meal or takeaway menu cook something quick and easy.
I love a good Gammon steak with Grilled Pineapple and with Pineapples only 79c in Supervalu this week it is a lovely light summer meal.
Tip- shop what is in season to save money
Nothing nicer than a takeaway but what if you can’t afford one – try these tasty Amazing Spanish Tapas Prawns – Slow-cooker recipe . They are the perfect taste of Spain in your own home and Lidl has bags of prawns for 3.99
Tip – Make your own take- away food you will save lots
Saturdays can be busy family days and you want something Quick and filling. Quick and Easy Bacon and Mushroom Pasta is just that and is a can be adapted to your families tastes.
Tip- have a list of recipes your family love that you can pull from
We will be having a Roast chicken and Roast Mediterranean vegetables on Sunday and I usually provide dessert. This week as blueberries are on special I am making Gluten Free Chocolate Blueberry Mini Brownies
