It has been beautiful here in Ireland recently and it is time to talk about what meals should we have in warm -weather. Warm weather meal planning is all about Salads, Light Meals and Slow-cooking. No one wants to spend hours in a hot kitchen but we still want to save money and have lovely meals.

MEATS – €3.00 – Breaded chicken goujons, Cod Fillets with Pepper and garlic, Steak Mince

ON Thursday Lidl have their Salad Trio on for 79c – pick up two and plant up Salad Planter. You can find out how to make your own Salad Planter here. It will provide you with tasty salad leaves all summer.
VEGETABLES 49c – Limes, Tomatoes, Beetroot, York Cabbage 79c – Easy Peeler Oranges, Pears, Apples
SuperValu has Bar-be-que Meats for €3.00 and they often reduce them to half-price I have a freezer full of chicken in Bar-be-que sauce and Marinaded Pork Chops.
I am going to include what is in season from the garden or the hedgerow from now on as I grow my own vegetables to save money.
In the Organic Garden – Spinach and Lettuce. Still harvesting Rhubarb and the last of the Spring Cabbages.

Today I am preparing something simple – I sometimes pick up store brought Quiche ( Lidl do a lovely one for just over a Euro). I make some fresh salad from the garden and if we need extra I make low-fat Wedges
Tip = Pick recipes you know your family love Quiche never fails in our house
I am working on Tuesday so I am relying on my trusty Slow cooker for this Amazing Slow Cooker Catalan Beef Casserole which is so good with crusty Loaf.
Tip – Slow-cooking is so handy it frees up your time and saves money and doesn’t heat up the kitchen on a warm day!!
Wednesday I run all my errands and I want something quick and cheap like Easy Seafood Paella . It is a perfect summer dish and reminds me of Menorca.
Tip – When you are busy instead of reaching for a ready meal or takeaway menu cook something quick and easy.
I am so happy the Spinach is still producing and this simple but wholesome Creamy Bacon and Spinach Pasta is a great way to eat it – get the recipe in this week’s Newsletter
Tip- Use in Season Vegetables in your cooking
Nothing nicer than a takeaway but what if you can’t afford one – make your own Easy Chinese Chicken with Five-spice Stirfry

We will be having a Roast chicken and Roast Mediterranean vegetables on Sunday and I usually provide dessert. We have a lot of leftover Bananas so I am whipping together this tasty Mango Ice-cream has two ingredients and it Vegan-friendly. It is made by freezing chopped old banana’s I always do this if they are going brown. You peel and chop your mango. Add the mango to a blender with you frozen banana pieces and blitz until smooth. Place in a freezer container to store or eat immediately (which is what happens here). Perfect for Sunny days.
